Hibiscus tea comes from the Hibiscus sabdariffa plant or Roselle, which is native to the tropics. Hibiscus tea is made from an infusion of the dried calyxes which form at the base of the flowers as they mature. The red calyxes are frequently used as a natural food colouring but also make a delicious herbal tea which can be taken hot or ice cold. It is important to dry the Roselle in the sun for 2 or 3 days before using as this brings out a wonderfully fruity aroma.

Hibiscus tea is believed to reduce cholesterol levels and is also prescribed as a diuretic in cases of Gallstones, Kidney stones and Urinary tract infections. Roselle is high in Vitamin C and Calcium.

Ingredients for Hibiscus Tea – Roselle

1 Cup Dried Roselle Calyxes
2 Litres Water
2 Cups Sugar

Method

1. Wash and drain the dried Roselle calyxes

2. Pour the water into a large pan and add the water. Add the Roselle calyxes

3. Bring the water to the boil over a medium heat. Add the sugar and stir until all the sugar has dissolved

4. Reduce the heat and simmer for 20-30 minutes.

5. Remove pan from the heat. Strain off the Roselle calyxes and discard. Drink while hot or add ice cubes and drink cold.

Ingredients:
For 2 servings
2 cups lemongrass, finely sliced
1 cup lemongrass leave, finely chopped
1 cup sugar
5 cup water

Preparation:

1.Boil the water with the sliced lemongrass. Let it boiled untill the water turns yellow. Remove from heat and pour through the filter to separate the lemongrass
2.In the electric blender, blend the chopped lemongrass leave with 1/2 cup of water. Pour through the filter to separate the leaves. This makes the condensed lemongrass juice.
3. Boil the lemongrass juice from step 1 again. Add sugar and let it boil until dissolved well. Add the condensed lemongrass juice. Stir and remove from heat.
4. It could be either as a hot or cold drink.

- 1 kg ripe tomatoes thai herb.

- Syrup 1 / 4 cup.

- Salt 1 tsp.

- 1 cup water. Lemon juice to taste.

How do

1. Glazed pot add tomatoes until the tomatoes soften the water boiling.

2. Bark off. Hemispherical sheep remove all seeds.

3. Crushed tomatoes on a sieve Or use any ground.

4. Mixing tomato thai herb juice into the water, syrup and salt Yee enough boiling pot.

5. Add the lemon juice taste like To raise and set aside to cool.

How to serve. Serve cold. Without ice.

Many herbs and spices used in Thai cuisine have beneficial medicinal properties.
Here are some examples.


Chili: "Phrik" in Thai
Chili is an erect, branched, shrub-like herb with fruits used as garnishing and flavouring in Thai dishes. There are many different species. All contain capsaicin, a biologically active ingredient beneficial to the respiratory system, blood pressure and heart. Other therapeutic uses include being a , carminative and anti flatulence agent, and digestant.


Cumin: "Yi-ra" in Thai
Cumin is a small shrubbery herb, the fruit of which contains a 2-4% volatile oil with a pungent odour, and which is used as a
flavouring and condiment. Cumin's therapeutic properties manifest as a stomachic, bitter tonic, carminative, stimulant and astringent.


Garlic: "Kra-thiam" in Thai
Garlic is an annual herbaceous plant with underground bulbs comprising several cloves. Dried mature bulbs are used as a flavouring and condiment in Thai cuisine. The bulbs contain a 0.1-0.36% garlic oil and organic sulfur compounds. Therapeutic uses are as an antimicrobial, diaphoretic, diuretic, expectorant, anti flatulence and cholesterol lowering agents.

Ginger is an erect plant with thickened, fleshy and aromatic rhizomes. Used in different forms as a food, flavouring and spice. Ginger's rhizomes contain a 1-2% volatile oil. Ginger's therapeutic uses are as a carminative, antinauseant and antiflatulence agent.

Galanga: "Kha" in Thai
Greater Galanga is an erect annual plant with aromatic, ginger-like rhizomes, and commonly used in Thai cooking as a flavouring. The approximately 0.04 volatile oil content has therapeutic uses as carminative, stomachic, antirheumatic and antimicrobial agents.


Hoary Basil: "Maeng-lak" in Thai
Hoary Basil is an annual herbaceous plant with slightly hairy and pale green leaves, eaten either raw or used as a flavouring, and containing approximately 0.7% volatile oil. Therapeutic benefits include the alleviation of cough symptoms, and as diaphoretic and carminative agents.

Kafffir: "Ma-krut" in Thai
The leaves, peel and juice of the Kaffir Lime are used as a flavouring in Thai cuisine. The leaves and peel contain a volatile oil. The major therapeutic benefit of the juice is as an appetizer.


(No Common English Name): Krachai in Thai
This erect annual plant with aromatic rhizomes and yellow-brown roots, is used as a flavouring. The rhizomes contain approximately 0.8% volatile oil. The plant has stomach ache relieving and antimicrobial properties, and therapeutic benefits as an antitussive and antiflatulence agent.

Lemon Grass: "Ta-khrai" in Thai
This erect annual plant resembles a coarse gray-green grass. Fresh leaves and grass are used as flavouring. Lemon grass contains a 0.2-0.4 volatile oil. Therapeutic properties are as a diuretic, emmanagogue, antiflatulence, anti flu and antimicrobial agent.

Lime: "Ma-nao" in Thai
Lime is used principally as a garnish for fish and meat dishes. The fruit contains Hesperidin and Naringin , scientifically proven antiinflammatory flavonoids. Lime juice is used as an appetizer, and has antitussive, anti flu, stomachic and antiscorbutic properties.
Marsh Mint: "Sa-ra-nae" in Thai
The fresh leaves of this herbaceous plant are used as a flavouring and eaten raw in Thai cuisine. Volatile oil contents give the plant several therapeutic uses, including
carminative, mild antiseptic, local
anesthetic, diaphoretic and digestant
properties.

Pepper: "Phrik-Thai" in Thai
Pepper is a branching, perennial climbing plant from whose fruiting spikes both white and black pepper are obtained. Used as a spice and condiment, pepper contains a 2-4% volatile oil. Therapeutic uses are as carminative, antipyretic, diaphoretic and diuretic agents.


Sacred Basil: "Ka-phrao" in Thai
Sacred Basil is an annual herbaceous plant that resembles Sweet Basil but has narrower and often times reddish-purple leaves. The fresh leaves, which are used as a flavouring, contain approximately 0.5% volatile oil, which exhibits
antimicrobial activity, specifically as a
carminative, diaphoretic, expectorant and
stomachic.

Shallot: "Hom,Hom-lek,Hom-daeng"in Thai
Shallots, or small red onions, are annual
herbaceous plants. Underground bulbs
comprise garlic-like cloves. Shallot bulbs
contain a volatile oil, and are used as
flavouring or seasoning agents. Therapeutic properties include the alleviation of stomach discomfort, and as an antihelmintic, antidiarrhoeal, expectorant, antitussive, diuretic and anti flu agents.
 
Sweet Basil: "Ho-ra-pha" in Thai
Sweet Basil is an annual herbaceous plant, the fresh leaves of which are either eaten raw or used as a flavouring in Thai cooking. Volatile oil content varies according to different varieties. Therapeutic properties are as carminative, diaphoretic, expectorant, digestant and stomachic agents.

Turmeric: "Kha-min" in Thai
Turmeric is a member of the ginger family, and provides yellow colouring for Thai food. The rhizomes contain a 3-4% volatile oil with unique aromatic characteristics. Turmeric's therapeutic properties manifest as a carminative, antiflatulence and stomachic.

ลักษณะทั่วไป

ต้น : เป็นพรรณไม้ล้มลุก ที่มีลำต้นประเภทเดียวกับไพล หรือขิง ลำต้นเป็นหัวอยู่ในดินมีสีขาวอมเหลือง

ใบ : ใบจะออกซ้อนกันเป็นแผง ลักษณะของใบเรียวยาว ใบมีสีเขียวแก่

ดอก : ดอกออกเป็นช่อ โผล่พ้นขึ้นมาจากหัวใต้ดิน ช่อก้านดอกยาว และเป็นปุ้มส่วนปลายมีกลีบเลี้ยงมีสีเขียวปนแดงซ้อนกันอยู่แน่น กลีบดอกมีสีขาวนวล มีลักษณะเป็นหลอด ส่วนปลายกลีบอ้าออก กลีบเลี้ยงจะอุ้มน้ำไว้ได้

กะทือเป็นพืชล้มลุก ฤดูแล้งจะลงหัว เมื่อถึงฤดูฝนจะงอกใหม่ หัวมีขนาดใหญ่ และมีเนื้อในสีเหลืองอ่อน กลิ่นหอม ต้นสูง 3-6 ศอก ใบยาวเรียวออกตรงข้าม ดอกเป็น ช่อรูปกระบองโบราณ อัดกันแน่นสีแดง ซึ่งเป็นส่วนของใบประดับ มีดอกสีเหลืองอ่อน ขนาดเล็ก บานครั้งละ 1-2 ดอก ปลูกโดยใช้หัว ขึ้นได้ทั่วไป

กระชายเป็นพืชล้มลุก สูงประมาณ 2 ศอกเศษ
มีลำต้นใต้ดิน เรียกว่าเหง้า รูปทรงกระบอกเนื้อสีเหลือง มีกลิ่นหอมเฉพาะ
เนื้อละเอียด กาบใบสีแดงเรื่อ ใบใหญ่ยาวเรียว ดอกเป็นช่อ

ส่วนที่ใช้เป็นยา » เหง้าใต้ดิน
กระชายเป็นไม้ล้มลุก สูงราว 1-2 ศอก มีลำต้นเป็นเหง้าใต้ดิน สีน้ำตาลเข้ม ขนานกับดิน มีราก รูปทรงกระบอก ปลายแหลมจำนวนมาก เนื้อในสีเหลือง มีกลิ่น หอม เฉพาะกาบใบ มีสีแดงเรื่อ ใบใหญ่ยาวรีปลายแหลม ดอกเป็นช่อ สีขาวอมชมพู บานครั้งละ 1 ดอก ปลูกในฤดูแล้ง โดยใช้เหง้าและราก
มีรสเผ็ดร้อน ช่วยดับกลิ่นคาวได้ดี ปรุงเป็นอาหารหลายชนิด เช่นน้ำยาขนมจีน แกงป่าปลา ปลาร้าหลน กะปิคั่ว แกงขี้เหล็ก รับประทานอาหารที่มีกระชายอยู่ด้วย จะช่วยขับลมได้ดี แก้ปวดมวนในท้อง แก้ท้องอืด เฟ้อ บำรุงกำลัง

สรรพคุณ กระชาย

1. แก้บิด ท้องร่วง ท้องเสีย นำรากกระชายย่างไฟให้สุก ตำให้ละเอียดผสมน้ำปูนใสในอัตราส่วน กระชายแก่ 4 หัว ต่อน้ำปูนใส 5 ช้อนแกง คนให้เข้ากันดีแล้วคั้นเอาแต่น้ำดื่มครั้งละ 3-5 ช้อนแกง ทุกครั้งที่ถ่าย เมื่ออาการดีขึ้นให้กินวันละ 3 ครั้ง เช้า กลางวัน เย็น เมื่อหายแล้วกินต่ออีก 1-2 วัน วันละ 2 ครั้ง เช้า-เย็น
2. รักษาโรคริดสีดวงทวาร ต้มกระชายพร้อมมะขามเปียก เติมเกลือแกงเล็กน้อย รับประทานก่อนนอนทุกวัน
3. ช่วยบำรุงกำลัง เป็นยาอายุวัฒนะ ตำรากกระชาย 1 กำมือให้ละเอียด คั้นเอาแต่น้ำ ผสมกับน้ำผึ้งในอัตราส่วนที่เท่ากัน รับประทานก่อนอาหารเย็น 1 ชั่วโมง ครั้งละประมาณ 1 ถ้วยชา
4. ช่วยบำรุงหัวใจ กระตุ้นให้หัวใจเต้นสม่ำเสมอ นำรากกระชายแก่ ปอกเปลือกหั่นเป็นชิ้นเล็ก ตากแดดให้แห้ง บดให้เป็นผงเก็บไว้ละลายกับน้ำร้อนดื่มแก้อาการเป็นลม
5. ไล่แมลง ใช้รากกระชาย ตะไคร้ หอมแดง ข่า ใบสะเดาแก่ ตำผสมกัน ผสมน้ำฉีดในบริเวณที่มีแมลงรบกวน
